For some reason, many are reluctant to use the convection ovens in their RV. They're fine with the microwave functions but aren't sure how the convection part works.
Actually as Mary Jane Curry, our favorite RV chef explains, convection ovens are extremely efficient. And to prove it, she shows Jennifer how to prepare a delicious meal, from start to finish.
She called the meal Glacier Chicken, as we happened to be at one of our Roadtreking gatherings near Glacier National Park in Montana when we made this meal.

2 whole uncooked chicken breasts
12 oz. mango chutney
1 1/2 tbsp. Dijon, brown or honey mustard
1 lime, juice and zest
1. Rinse chicken, pat dry and cut into 1″ cubes or tenderloin strips
2. Place chicken in an oven safe casserole dish that fits on the convection oven rack.
3. Add chutney, mustard, lime zest and juice to the casserole and stir to combine.
4. Set convection by selecting the convection button.
5. Coat casserole dish lightly with baking spray prior to adding the Glacier chicken.
1. Select the heat level desired. ‘7 ‘ (340 – 350 F) depending on the oven.
2. When the convection oven reaches temperature it will ‘beep'.
3. Place the casserole dish on the oven rack, close the oven and select the time.
4. The time is set by entering minutes and seconds. Set for 40 minutes by pressing
4000 and then the start button. The visual digital display will show [40:00]
5. Check the chicken internal temperature with a digital probe after 35 minutes. Open
oven door by pressing the door open button.
6. Chicken is fully cooked at 165 F internal temperature when probe is in the center of a piece of chicken.
7. If needed, resume cooking time by closing the oven door and pressing ‘start', the count down
continues from the time that was remaining when you last opened the door.
8. If the chicken reaches 165F prior to the time set, remove casserole dish, close oven door, press ‘stop/cancel' button.
9. If additional cooking time is needed after the full amount of time initially set, add time by starting again with notes #1 – 3.
For #4 just add the amount of time you need 500 = [5:00]
Serve over a mixed green salad or cooked rice, grains or noodles.
