This elegant entree' is a great addition to your holiday table, especially if it's cooked in your RV. You can substitute braised vegetables for the filling if you prefer a vegetarian alternative or for our family I make some of each!
Frozen Puff pastry, defrost as directed on package
Smoked pulled pork (Costco has this in the fresh food section and it is pre-cooked!).
Sweet Baby Rays BBQ sauce
Swiss cheese slices – optional
egg wash (1-2 eggs lightly beaten)
Defrost puff pastry: 40 minutes on the counter. Pre-heat oven: 400 degrees. Bake wellington bundles approx. 15- 20 minutes or until golden brown and warmed throughout.
Cut defrosted puff pastry sheets in half. Bake or microwave cooked pulled pork as directed and then cool. Seperate pre-cooked pulled pork with a fork to unclump the meat slightly. Place a medium sized mound of the pork into the center of the puff pastry, top with a tablespoon of bbq sauce and if desired a 1/2 slice of swiss cheese. Roll the puff pastry as you would a burrito (folding 1 portion of puff pastry over the meat, then fold in the side of the puff pastry into the meat mixture and roll the meat pastry to incorporate the final portion of the puff pastry. Place the meat pastry bundles on a parchment lined baking sheet. Using a pastry brush, dip the brush into the egg mixture and then apply brushed egg wash to the top of the pastry. If you have x-tra pastry you can add a pastry cut out shaped like a holly leaf or other design to the top center of your meat/pastry bundle. Bake in a pre heated oven until the puff pastry is medium golden brown using the suggested times from the side of the frozen pastry box, an estimate is given above.
When baking is complete. Remove the baking dish from the oven and let the bundles rest for 5 minutes, then plate and serve!
Vegetable Wellington alternate:
If using vegetables rather than meat, braise the vegetable you like as cubed butternut squash, sliced onions, mushrooms, red, yellow, orange pepper slices make a good combination. Pat them with a paper towel before placing the braised veggies onto the defrosted puff pastry. Roll the bundle as above.
These bundles make a pretty presentation and can be made ahead and reheated in the oven or microwave. You can even make up the bundles and freeze them prior to egg washing and baking. Flash freeze the bundles by letting the bundles freeze without touching in your freezer. Once the bundles are frozen you can place them together in a freezer ziplock bag until ready to use. When ready to bake. Remove the ziplock frozen bundles from the freezer and the ziplock, bring the bundles to room temperature on a parchment lined baking sheet, brush the top of each bundle with egg wash and bake as directed.
These are tasty, easy and look like you knocked yourself out as a gourmet chef!
