Here is a recipe for stovetop date candy rolled in coconut. This candy comes together rather easily and the tasty treats it keeps well for more than a week. Cover candy with saran wrap on a serving tray.
3/4 cup sugar
1 cube unsalted butter
1 egg, slightly beaten
1 cup dates, pits removed
1 teaspoon vanilla
3/4 of 1 cylinder of graham crackers, crushed
3 oz. shredded coconut, rough chopped
Melt butter in medium saucepan with sugar over med/low heat until butter is melted completely and well combined with the sugar. Take the pan off heat. Add dates. Add egg mixture slowly when butter mixture has cooled slightly so that the egg does not scramble.
Place saucepan back on the stove. Heat over medium heat to a boil and stir intermittently for 10 minutes. Lower the heat some if needed to maintain a low boil.
Take mixture off heat. Add vanilla and crushed graham crackers. Stir to combine.
When mixture is cool enough to handle. Roll the date candy into small balls the size of 1/2″ teaspoon. Next roll the candies in the coconut.
Place on a baking sheet covered with parchment paper and allow the candy to cool completely. Store candy tray covered with saran wrap.
